Salmon is my secret weapon for fast, healthy dinners. It cooks in minutes, it is packed with protein and omega-3s, and it takes on almost any flavor, from garlic butter to teriyaki to a simple squeeze of lemon. Here are my favorite salmon recipes, most of them ready in about 30 minutes.

How to Cook Salmon Perfectly
- Check the temperature: the USDA recommends cooking salmon to 145°F (63°C); many cooks take it off a little earlier for a more tender, moist texture.
- Look for flaking: salmon is done when it turns opaque and flakes easily with a fork.
- Pat it dry: drying the fillets before seasoning helps them brown and crisp.
- Do not overcook: salmon keeps cooking for a minute or two after it comes off the heat.
Salmon FAQ
Should I cook salmon skin-on or skinless?
Skin-on salmon holds together better and gets crispy in a pan or on the grill. Skinless fillets are easier for baking with a crust or glaze.
