As soon as the evenings get cooler, my stove almost always has a pot of soup on it. Soup is the easiest way I know to get a nourishing, vegetable-packed dinner on the table, and most of these recipes make enough for lunches all week. Here are my favorite healthy fall soups and stews, from silky pumpkin and butternut squash to big pots of chili and slow-simmered beef stew.

My Tips for Better Homemade Soup
- Build flavor first: take a few minutes to brown the onions, garlic and meat before adding liquid.
- Blend for creaminess: pureed vegetables like squash, cauliflower and potatoes make soups creamy without much cream.
- Season at the end: a squeeze of lemon or a splash of vinegar just before serving brightens every bowl.
- Make extra: most of these soups freeze well for up to 3 months, except creamy dairy-based soups which can separate.
Fall Soup FAQ
Which soups freeze best?
Broth-based, bean and pureed vegetable soups, chilis and stews freeze best. For soups with pasta or noodles, freeze the soup without them and add freshly cooked pasta when reheating.
How long does homemade soup last in the fridge?
Most homemade soups keep 3 to 4 days in an airtight container in the refrigerator.
